Courtside Fresh Grill & Bar Recipe: Mediterranean Quinoa Salad Bowl

Ingredients 1 cup cooked quinoa 1/4 cup chopped cucumber 1/4 cup chopped olives 1/4 cup crumbled feta cheese 1/4 cup tomatoes, diced 2 tbps red onion 2 tsps chopped parsley 2 tbps hummus 1/2 tbp olive oil + salt + black pepper Lime wedges to serve Instructions Cook the quinoa according to the package directions and as desired Per Bowl Split the ingredients in half and add to each bowl as desired. Spoon hummus on top (mix if desired). Drizzle olive oil and grind salt and black pepper over each bowl. Serve with a lime wedge to squeeze.

Welcoming another spectacular year of the Annual Heart of America Handball Tournament at The Athletic Club of Overland Park. Please join us on October 6 – 8th for the 53rd Annual H.O.A. Tournament! Start times can be checked online. First round matches will be available after 1:00 PM on Thursday, October 5th. Play starts at 4:00 PM on Friday, October 6th. The Athletic Club of Overland Park is honored to host the 18th Annual Ghost of Georgetown KC IRT Racquetball Tournament. This year’s tournament will be held September 15-17th, 2017. Divisions for all skill levels and age groups. Free viewing for spectators for all matches, come early to grab your spot! Lunch and dinner will be provided on Saturday for tournament participants.
