Please join us at The Athletic Club of Overland Park for the 2017 Table Tennis Fall Open hosted by Kansas City Table Tennis!  This USATT sanctioned 2-star tournament will be held on November 3rd through November 5th which will consist of 13 different event groups.  Player’s ratings will be pulled from USATT website on October 11th, if they have one, and this will be used to rate the players for the tournament. Courtside Fresh Grill & Bar Recipe: Mediterranean Quinoa Salad Bowl

Ingredients 1 cup cooked quinoa 1/4 cup chopped cucumber 1/4 cup chopped olives 1/4 cup crumbled feta cheese 1/4 cup tomatoes, diced 2 tbps red onion 2 tsps chopped parsley 2 tbps hummus 1/2 tbp olive oil + salt + black pepper Lime wedges to serve Instructions Cook the quinoa according to the package directions and as desired Per Bowl Split the ingredients in half and add to each bowl as desired. Spoon hummus on top (mix if desired). Drizzle olive oil and grind salt and black pepper over each bowl. Serve with a lime wedge to squeeze.
